Three-time number one Noma continues to take an innovative and inventive approach to both its cooking and its strictly local sourcing and foraging. Chef-patron René Redzepi’s food can at times be shocking but it reflects the Danish landscape and culture.
Noma is a two Michelin star known for its reinvention and interpretation of the Nordic Cuisine. The restaurant is located in an old warehouse on the waterfront in the Christianshavn neighbourhood of central Copenhagen.
New Nordic Cuisine influenced by molecular gastronomy. Serves fanatical foodies “new Nordic cuisine” - heavy on the bone marrow, lamb’s brains, truffles, snails, rose-hip petals, and vacuum-packed kohlrabi. Try hen and the egg - René Redzepi's signature dish.
At just 35, Rene Redzepi is the master chef of Noma. To say that he is one of the most influential chefs of the international gourmet scene, he has literally reinvented Nordic cuisine. Before opening the Noma in 2003, Redzepi has worked in the restaurant Le Jardin des Sens in Montpellier (three Michelin stars), the acclaimed El Bulli 's Ferran Adrià in Roses, at The French Laundry Thomas Keller, and most recently, at Kong Hans Kælder, another famous restaurant in Copenhagen.
